Cooking Palooza

School is almost out for the Summer!  With that comes the need for quick fix meals.  While many are on the river, or at the beach, I’m taking advantage of a 3 day weekend to prep and stock our very empty and neglected freezer.  Week day Summer lunches, quick evening dinners, and a few treats for breakfast on the run, and late night snacks.

Here’s a sneak peek of what’s cooking while I’m at the office working. 

Homemade spaghetti sauce, simmering to perfection. Black beans soaking, waiting to be seasoned and cooked low and slow. Boston Butt, seasoned with Leggs Sausage Seasoning, also cooking low and slow; to be pulled for sandwiches, nachos, or eaten alone with macaroni and cheese that will be prepared tomorrow.
