Quick and Easy Burrito Bowls

The past month I’ve enjoyed spending a little more time in the kitchen. Tonight I needed something quick, with easy cleanup.  A stop at the grocery store during lunch, plus a few items on hand at home, and we had the makings for Chicken Burrito Bowls. 

There’s no right or wrong way to make burrito bowls. Chicken, ground beef, or steak. Left over chicken or steak is easy to use. White, brown, or yellow rice.  Fresh toppings – lettuce, tomato, onion, jalapeño peppers, sweet red peppers, avocado, sour cream. You get the idea. 

Tonight I took the easiest route I could. Preseasoned, ready to eat chicken, fresh salsa from the deli, frozen brown rice, frozen corn,  canned black beans, plus a few fresh toppings I had on hand. 

Warm the chicken, corn, and black beans. Layer in a bowl, top with cheese, sour cream, diced avocado, salsa, and Doritos. Doritos add a crunch and cheesy tortilla chip flavor that puts the perfect finishing touch on these quick and easy burrito bowls.
