Happy Tuesday! Today has been a beautiful North Florida Winter day. The morning began with cool temperatures in the mid 30’s. (That’s about as cold as we get most of the time). By the late afternoon, the sun was shining and it was a warm low 70’s! Cooling down again this evening, for a repeat tomorrow. Only in North Florida do you begin the day with heated seats, and the heater on, and end it with the sunroof open, and the AC blowing, during our commute to and from school and work.
Our schedules have been double booked, and ever changing the past few weeks, causing me to slack on meal prep. Thankfully, several weeks ago I was able to put a few pre-pattied hamburger patties in the freezer. Tonight they came in handy.
What’s better than comfort food on a cool winter evening, when everyone is home, and an open schedule? (Except for the quick trip to our local sports store for new soccer cleats). Hamburger steak, mashed potatoes and gravy, and sautéed fresh broccoli and baby carrots.
To make the hamburger steak, I started by seasoning the hamburger patties with salt and pepper. Cook them on medium heat in a skillet, until almost done. Turning half way through. Remove patties from skillet. Deglaze the skillet with a dash of beef broth, using a wire whisk to remove all those little bits of flavor that are stuck to the bottom of the pan. Add a total of 1 can of beef broth, season if needed, and bring to a low simmer. Thickened with a mixture of cornstarch and water. Once thickened, return patties to skillet, cover and simmer on low until done. If it were a really chilly evening, you could also, place the hamburger patties and gravy in the oven to finish cooking.
