Ever have one of those days where you really don’t want to cook dinner? Clean the kitchen before you begin cooking, followed by cleaning the kitchen after your done? You have no idea what to cook? You’ve thought too hard and made too many decisions all day, that cooking dinner is not at the top of your list? Maybe it’s just me? Well, today was one of those days that mid answer “yes!” To each of those questions.
All I could think about was mac n cheese! One of the best comfort foods. Ooey, gooey, mac n cheese. With a side of BBQ chicken.
One of my first posts was Fried Taters and Chicken Wings. In that post I shared about chicken we put on the smoker and stored in the freezer for later. Tonight is later! While I was making the Mac n Cheese, (divided it between 2 pans. One for now, one for the freezer) the chicken was warming in the oven, covered with foil, and a little chicken broth to keep it moist.
Tonight’s mac n cheese was a simple combination of macaroni, melted butter, milk, and cheese. Mix all together and bake, covered, at 375 for 15 minutes. Top with shredded cheese and bake 5 more minutes.
Dinner is ready!
