Tonight’s dinner is not your traditional 4th of July BBQ. Living in the South, it is HOT today! Too hot to grill burgers on the grill, so we opted for a twist on burgers and potato salad. Hamburger Steak, Mashed Potatoes and Gravy, Steamed Broccoli and Cauliflower, Garlic Bread, and Strawberry Pie for dessert. (after an evening of fun with Sparklers and Pop Its)
I made extra hamburger steaks and mashed potatoes, to have for leftovers later in the week. My 13 year old son is now on his 3rd helping of mashed potatoes and gravy. (I don’t think there will be enough for later in the week.)
This meal is a family favorite, and is quick and easy. I purchase ground beef in bulk, make hamburger patties in advance, and store in the freezer until ready to use. The mashed potatoes were purchased frozen. Add some chicken broth, evaporated milk, butter, and pepper. (I really like the taste and consistency of the Trader Joe’s brand.) The broccoli and cauliflower were seasoned with Everglades seasoning, and steamed in a rice cooker.
And, the best for last, Strawberry Pie! Simple recipe using strawberry jello and cornstarch.
